Southern cuisine – The sweetness, a Combination of Many Locations

Southern Vietnamese cuisine is a unique blend of different regional cuisines, influenced by the people who settled and worked there. You can find Chinese, Khmer, and Cham-influenced dishes, as well as many specialities from the Southern provinces. Southern Vietnamese cuisine uses a harmonious blend of spices, primarily combining the sweetness of sugar and honey with sour and spicy flavours. Some typical dishes from the South include Cơm tấm Sài Gòn (broken rice with grilled pork), Hủ tiếu (a type of noodle soup), Gỏi cuốn tôm thịt (spring rolls with shrimp and pork), and Canh chua cá lóc (sour fish soup with snakehead fish).
